More Healthy Eats

Another one of my goals...lose 5 pounds.  That has to be obtainable, doesn't it?  Maybe it isn't so easy after having a baby though.

Oh Mr. Scale, you are so cruel.  Why don't you go down?  Just a little bit to give me some motivation?  No worries, I won't give up.  You can't defeat me that easily.

Sunday I stocked my counter with all kinds of fruits, local bread, and even some fresh basil.  I recently read in Real Simple magazine that eating oranges can help lose weight.  Sounds pretty sweet to me.


I also made one of my favorite soups.  It's super healthy as it's packed full of veggies and barley.  And, it meets my criteria for cooking:  must be easy or I won't end up making it.

It's a veggie barley soup and here is the scoop on how you prepare it:\

Cut up a small onion, use half a bag of mini-carrots, and cut up 5 stalks of celery.  Put some olive oil in a large soup pot along with some garlic and the onion.  Saute it up.

After the onion is cooked, add 5 cups of water, 2 beef bullion cubes, the veggies, 3/4 cup of quick barley, a bay leaf, and a shake or two of dried basil.

Cook for 20 minutes or until the veggies are done.  There you have it, a warm, healthy meal that is great for a Sunday lunch.

  2. Sounds good to me! Sometimes I think 5 lbs is so much harder than a bigger amount of weight to lose! You can do it :)
    (Then again I have like 40 to lose - so what's my excuse! HAHA!)
