Yum: Chili Verde

As little Jackson takes bite after bite of his fruits and veggies, I oftentimes think to myself, "is my food this healthy?" 

Yes people, I'm still trying to prepare healthier meals for me and my husband.  It's been going pretty well, if you don't count that day last week when I was stressed out and bought Jimmy John's on the way home from work.  Sigh.

Moving on from that one setback, last weekend my husband and I decided to try out this beef & bean chili verde recipe I came across on Eating Well.  I have to be honest, the reviews said it was delicious, but I was skeptical. Well, I admit I was wrong to be skeptical.  It was absolutely awesome.

The chili had this unique and hearty appeal to it.  I didn't feel like I was eating light, and better yet, neither did my husband.  He ate two bowls which is always a good sign.

As I was eating this up, I could think of many other things to add to it to make it even better...a warm tortilla, some guac and sour cream on top, hell, a margarita.  All would be good add-ons.  Another idea is using pulled pork as the meat in replace of ground beef.  Or, perhaps for a super-healthy option, try boca ground beef.

So cook up some chili verde sometime and don't feel guilty about it at all.  Well, only if you skip the margarita.

    It's the truth - I go out of my way to make sure Julianna eats perfectly pure & healthy food ... but yet, I have no problem eating a sodium & preservative filled lean cuisine. What kind of roll model is that? We *have* been making an effort to eat better lately for her sake. I will be trying this one for sure! :)
